Creamy Pesto Chicken
Perfect for meal-prep, this creamy pesto chicken is delicious and packed with protein and nutrients.

Ingredients
- 1½ lb chicken thigh
- cayenne
- cajun seasoning
- Italian seasoning
- garlic powder
- black pepper
- salt
- 1 tbsp olive oil
- 16 oz grape tomatoes halved
- 3 tbsp pesto
- 8 fl oz whipping cream
- 6 oz spinach
Instructions
- Lightly season chicken thighs with cayenne, cajun seasoning, Italian herbs, garlic powder, black pepper, and salt.
- Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chicken thighs to the pan and lightly sear all sides.
- Remove chicken from pot.
- In the same pot, add 16 ounces of grape tomatoes, 3 tablespoons of pesto, and 8 fluid ounces of whipping cream, reduce heat to low.
- Add the chicken back to the pot containing the tomatoes, pesto, and whipping cream.
- Allow everything to simmer until the chicken is fully cooked and tender, about 1 hour.
- Add 6 ounces of spinach and cook until spinach has wilted. Enjoy!
