Instructions
Lightly season chicken thighs with cayenne, cajun seasoning, Italian herbs, garlic powder, black pepper, and salt.
Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chicken thighs to the pan and lightly sear all sides.
Remove chicken from pot.
In the same pot, add 16 ounces of grape tomatoes, 3 tablespoons of pesto, and 8 fluid ounces of whipping cream, reduce heat to low.
Add the chicken back to the pot containing the tomatoes, pesto, and whipping cream.
Allow everything to simmer until the chicken is fully cooked and tender, about 1 hour.
Add 6 ounces of spinach and cook until spinach has wilted. Enjoy!
Notes
Creamy Pesto Chicken is best served with white rice
