Creamy Pesto Chicken

Ingredients

  • lb chicken thigh
  • cayenne
  • cajun seasoning
  • Italian seasoning
  • garlic powder
  • black pepper
  • salt
  • 1 tbsp olive oil
  • 16 oz grape tomatoes halved
  • 3 tbsp pesto
  • 8 fl oz whipping cream
  • 6 oz spinach

Instructions

  • Lightly season chicken thighs with cayenne, cajun seasoning, Italian herbs, garlic powder, black pepper, and salt.
  • Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chicken thighs to the pan and lightly sear all sides.
  • Remove chicken from pot.
  • In the same pot, add 16 ounces of grape tomatoes, 3 tablespoons of pesto, and 8 fluid ounces of whipping cream, reduce heat to low.
  • Add the chicken back to the pot containing the tomatoes, pesto, and whipping cream.
  • Allow everything to simmer until the chicken is fully cooked and tender, about 1 hour.
  • Add 6 ounces of spinach and cook until spinach has wilted. Enjoy!
