In a mixing bowl, combine a pound of ground beef, teaspoon of kosher salt, ½ teaspoon of black pepper, ½ teaspoon of cajun season, ¼ cup of diced onion, ⅛ cup of bell pepper, ⅛ teaspoon of lemon pepper, and ⅛ teaspoon of garlic powder with hands.
Pat beef mixture into 2½-3 inch diameter patties. Lay patties into flour mixture to coat on both sides.
Heat vegetable oil in a large skillet (enough to cover bottom) over medium-high heat. Add patties and cook on both sides until golden brown, then remove patties from skillet.
Pour off excess oil, leaving about a tablespoon of oil in the pan. Do not wipe out pan.
Add a pinch of finely diced onions over medium heat and cook until slightly brown, then add 1½ tablespoon of flour mixture and allow flour mixture to brown slightly.
Slowly pour 1½ cup of water into pan while stirring, add ¼ teaspoon of kosher salt, ⅛ teaspoon of black pepper, and allow to simmer for about 5 minutes. If gravy thickens too much, slowly add a teaspoon more water until desired consistency.
Add beef patties to gravy, cover and let simmer on low for a few minutes more. Turn off heat and it's ready to serve!
