In a mixing bowl, combine 1 pound of ground chicken, 1 teaspoon of black pepper, 1 tablespoon of cayenne, and 1 teaspoon of cajun seasoning. Combine well.
With the combined mixture, pat out 4-6 circular patties. Place in freezer for 5 minutes.
Pour panko breadcrumbs in a large plate. Drop each patty in the panko breadcrumbs and press in the breadcrumbs. Ensure all sides and edges have full coating.
Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Once oil is hot, place patties in the oil. Cook chicken patties on each side until lightly browned.
Remove chicken patties from pan and serve on hamburger bun with your favorite toppings.
